Basic Muffin



½ stick (¼ cup) margarine, softened 1 t baking soda
1 cup sugar 1 t salt
3 t Egg-replacer + 3 T water beaten lightly with a fork 2 t vanilla
2 ½ cup TC Multi-baking mix 1 ½ cup applesauce
2 t baking powder  ½ cup non-dairy creamer

Mixing instructions:

In large bowl, beat margarine, sugar and egg replacer mixture on medium speed until well mixed. In a separate bowl, mix together baking powder, soda, salt and sifted baking mix.  Add mixtures together and beat lightly. Stir in vanilla, applesauce and non-dairy creamer until smooth. Divide the batter among 12 greased muffin cups.

Baking instructions:

Bake at 350°F for 30 minutes or until a toothpick inserted comes out clean.


  1. Add ½ cup of cranberries or raisins with ½ t cinnamon to the batter and mix. Pour the batter into a floured / buttered cake pan and bake it at 350°F for 45- 50 minutes until a toothpick inserted into the cake comes out clean.
  2. Mix 1cup brown sugar and 1 t cinnamon. Divide this mixture among 12 greased muffin cups. Spoon batter on top of the sugar mixture in each muffin cup. Or bake it as one single cake in a bundt cake pan.
  3. Add 1cup strawberries, blueberries or canned pineapple chunks to the basic batter.Place in cake pan or spoon batter into greased muffin cups.

Optional struesel topping:

½ cup brown sugar, ½ stick(1/4 cup) margarine, ½ cup TC multi-baking mix, ½ t cinnamon. Mix together and sprinkle on top of any (variation) batter before baking. Bake as above.

Basic recipe yields 12 muffins.
