Light As Air Pancake
1 cup TC Multi-baking mix
1/2 tsp baking powder
1/2 cup Mocha Mix
1/4 cup apple sauce
1/2 tsp ground cinnamon
1 tsp Ener-G egg replacer
1/3 cup water
Mix all the dry ingredients together. In a blender add the Mocha Mix, apple sauce and the mixed dry ingredients. While the blender is running add the water slowly until you have a thick pancake batter. The blender helps to create a really airy batter and the pancakes are very fluffy. Use a 1/4 cup measuring cup to pour batter in batches on a hot griddle that has been greased with margarine. Fry until it is bubbly on the top and turn it once. Fry for a few more seconds on the second side. Serve with syrup and for added taste with a tablespoon of Non-dairy whipped cream.
